Chili Cookoff: White Chicken Chili

It’s time to fill this Le Cruset Pot with
Aimee’s Newfangled Cowtown White Chicken Chili!

This is one of my favorite recipes EVER!


Finely chop the onions….
There are so many varieties and inspirations for chili.  A GREAT chili is accomplished when it has a rich, complex flavor.  It takes time for the ingredients to develop and blend, so start early and allow your chili to simmer!  Your labor of love will result in a savory pot of chili!

If not, get one!  Love it!
Altogether there were SEVEN Chili’s to Sample.  Since this is my little world I’m going to say mine won HANDS DOWN!!!  Truthfully, I think more chose Chili with Beef, but a lot was gone at the end of the evening. Thankfully a bowl full was left for me the next day.
Garnished with Cheese, Sour Cream and Tortilla Chip
(or Fritos if You’re My Photographer).

And these are the cute little treats that I’d planned on having the little girls put together for me when time started to run away from me and I didn’t have time to complete them.  It was a little complicated for a couple girls, but a few stuck with it and had a ton of FUN!  The kids were all thrilled to have a lollipop on the back of an eight-legged Halloween Spider with cute googly eyes for the drive home!

Here’s the recipe for my White Chicken Chili.  You have to promise me

you’re going to try it this Fall sure to become one of your menu staples!

Aimee’s Newfangled Cowtown White Chicken Chili
1 Tablespoon Olive Oil
2 Medium Onions, finely chopped
4 Garlic Cloves, chopped
1 Can Chopped Green Chilies
4 Cups Cooked Chicken, Shredded
2 Teaspoons Cumin
1 1/2 Teaspoon Dried Oregano
1/4 Teaspoon Cayenne
3 16 oz. Cans Great Northern White Beans
6 Cups Vegetable Broth
Salt & Pepper
Heat oil in large pot to medium high.  Add onions and saute until translucent {about 10 minutes}.  Add garlic, chilies, chicken, cumin, oregano, and hot pepper.  Saute for 2 more minutes.  Add beans and chicken broth.  Bring to a boil, reduce heat and simmer for 2 hours or longer.  Add salt and pepper to taste.Also, check out….
