New Year’s Eve Plans: Chocolate Fondue

In the midst of putting Christmas back in the attic and cleaning the dust and glitter leftover from December, I prefer picking up Sara Lee’s Pound Cake…it’s AWESOME! Keep it in the freezer {that’s where it is at the grocery store, too}, thaw in the microwave for 10 seconds, slice and enjoy!
Pictured: Pound Cake, Pretzels, Strawberries. Other Ideas: Bananas, Marshmallows, Graham Crackers, Wafer Cookies, Biscotti, and the list is never ending!!! That’s the good and the bad about fondue!!
Of course we celebrate the first round with our Sweet B’s, but no one, myself included would want to hang out with them the next day if they rocked it until midnight!!! Totally no complaints from either of us in regards to staying home. Relaxing on a special evening with my bestest friend makes for the best evening of the year! Especially as we reflect together on the events of the year! 2011 has definitely not been an easy one for us, so much transition and tons of ups and downs, in fact it’s been downright tough! But I truly believe the greatest inward growth is often found in those hard times. As we spend the evening together, I think we’ll be able to glean the beauty from this season! Of course, our three Sweet B’s may come up a time or two, too!!! And hopefully all this root growing in 2011 can do some flourishing and budding in 2012!
I think we’re both ready to say goodbye to 2011 and look to 2012 with great anticipation of what might be!!! Possibilities are endless! {Yes, I’m one of those weirdos that totally looked forward to the first day of school, couldn’t wait for the promises of a new beginning}.

1/2 cup whipping cream
1/4 cup milk
3 Tablespoons of sugar
2 Tablespoons corn syrup
6oz. semi-sweet chocolate chips
1 teaspoon vanilla
Add all of the ingredients except the chips and vanilla to a saucepan and bring to a boil, mixing frequently. Once you’ve reached a boil, add the chips and stir until they’re melted and well combined. Add a teaspoon of vanilla, continue mixing.
You can serve it at this point, but I’ve found my results are best if I cool the sauce and then refrigerate for 2 hours, then reheat. No worries if you’re running behind, serving right away works too, it just won’t be quite as thick!
Enjoy with your favorite dipping treats! Fruit, crackers, cookies cake, marshmallows!?!? Let me know if you try something totally crazy, I’ll try it, too!! XO! Anything with chocolate fondue is ALWAYS good!
Oh, and I double this recipe. I’m noticing a trend here, promise I don’t eat it all in one sitting! I like a little extra leftover for later!!!

Yum! We don’t want to get anyone sick so we are staying at home with the kiddos this year. This would be a fun idea to do as a family. Have you ever been to The Melting Pot? It is an amazing (but expensive) fondue restaurant. This reminded me of what they serve.

This sounds so much better than when I just melted chocolate, and I like that it does not have to be super hot. My poor son was so excited and it was too hot so now he won’t try it again. Maybe this time, since I can put it in the fridge.
