7 Layer Bean Dip {Super Fresh}

Finely dice half of a tomato.
Remove the avocado pit by making one swing of the knife into the pit until it is secure in the pit.
Rotate the knife counter-clockwise until the pit pops out of the core. Spoon the avocado out of the peel. Thinly slice 1/4 avocado for garnishing. Mash the remainder of the avocado in a small bowl. Add 1/2 teaspoon lime juice and 1/2 teaspoon taco seasoning. Mix until well blended.
Place the refried beans inside a microwave safe bowl. Microwave for two minutes so that the beans are an easier consistency to work with. Remove from the microwave and add a tablespoon of sour cream for creamier beans.
- can of refried beans
- can of black beans {rinsed and drained}
- small can of black olives {sliced}
- grated colby jack cheese
- 1/2 tomato
- avocado
- 1/2 teaspoon of lime juice
- 1/2 teaspoon & 1 Tablespoon taco seasoning
- 1 cup sour cream
- 1/2 cup salsa

Microwave refried beans, add 1 Tablespoon sour cream and 1 Tablespoon taco seasoning. In a square glass pan, layer refried beans, sour cream, guacamole, black beans, cheese, tomatos and black olives. Garnish with a dallop of sour cream and thinly sliced avocado. Refrigerate for several hours or until chilled. Serve with tortilla chips and salsa.

I have had this and it is very good. I was most impressed with the shot of the avocado pit popping out. Personally, I thought everyone was cheering on the Cowboys. Enjoy
