Five Minute Cake in a Mug!!!

You are in for a TOTAL treat! It’s almost Mother’s Day and this is a gift that even my nine year old can make on her own! Do you remember when I shared with you 20 Awesome Microwave Uses!? Here is awesome microwave tip number twenty: ‘Five Minute: Cake in a Mug!’ My sweet B’s like to help me make this from time to time for a special treat, it’s not gourmet, but it’s fast, simple and definitely good! Fun for slumber parties, after school snacks and Friday pizza and a movie nights!
Combine dry ingredients in a bowl. Add egg, milk and applesauce {or canola oil} and vanilla. Mix well. Add preferred optional ingredients. Spray a mug with cooking spray and pour mixture into one large mug (or two smaller mugs). Put the mug into the microwave for 1 1/2 – 2 minutes at 1000watts {all microwaves cook differently, be sure not to overcook it, a clean toothpick is a great way to test}. The cake may rise above the lip of the mug, but no worries, it will drop back down.
Remove from the microwave and let cool for a few minutes…as long as you can stand it! Turn the mug over on a plate or leave your cake in the mug! Sprinkle with powdered sugar and enjoy your fudge textured chocolate cake best served right away, while still hot…a scoop of ice cream on top makes this heavenly…just sayin’!
Five Minute: Cake in a Mug
a coffee mug
4 tablespoons all-purpose flour
4 tablespoons granulated sugar
2 tablespoons pudding mix {or cocoa}
2 tablespoons whisked egg
3 tablespoons milk
3 tablespoons applesauce {or canola oil}
1/8 teaspoon of vanilla
optional: 3 tablespoons chocolate chips, favorite candy bar, or nuts
Combine dry ingredients in a bowl. Add egg, milk and applesauce {or canola oil} and vanilla. Mix well. Add preferred optional ingredients. Spray a mug with cooking spray and pour mixture into one large mug (or two smaller mugs). Put the mug into the microwave for 1 1/2 – 2 minutes at 1000watts {all microwaves cook differently, be sure not to overcook it, a clean toothpick is a great way to test}. The cake may rise above the lip of the mug, but no worries, it will drop back down…pretty fun to watch! Remove from the microwave and let cool for a few minutes…as long as you can stand it! Turn the mug over on a plate or leave your cake in the mug! Sprinkle with powdered sugar and enjoy your fudge-textured chocolate cake…best served right away, while still hot…a scoop of ice cream on top makes this heavenly…just sayin’!*For a lighter texture, add 1/2 teaspoon of baking powder to your mug when you add the flour it may not look as pretty when it’s finished, but will taste great…and just in case it spills over, place your mug on a plate while microwaving.
**If you make this in a large mug, you may want to use a serrated knife to cut it into two equal pieces!

That is such a great ideas. Thanks for sharing. I assume you don’t have to grease or butter the inside of the mug.
This looks yummy and I would love to try making some but have a few questions -
PUDDING MIX – Not sure what this is – your picture shows a pack of Jell-O which I thought was what we in the UK call Jelly but not sure if this is correct as we don’t have Chocolate jelly.
FLOUR – should this be plain or self-raising?
SUGAR – should this be caster or granulated?
Thanks, Lynn x
We have instant Chocolate Pudding mix made my Jell-o! Isn’t it so funny, such a small world, but still a few differences! The sugar is granulated and flour is all-purpose. XO, Aimee
This looks delicious! I am going to share this recipe with my grandmother. She doesn’t cook or bake much anymore but could manage this in the microwave with no trouble. Thanks so much!
Heading to the kitchen now for chocolate. You gave me an idea…

I was in the mood for something chocolate-y and sweet, however we had nothing in the house already prepared – I can’t drive – and I can’t cook! I found this recipe, and oh my gosh, it’s perfection. SO sweet and fluffy. I added some hot fudge to the mug cake once the microwave dinged.
Thank you for this recipe!
