Summers are definitely made for Salads! Asian Chicken Salad with homemade dressing
is another of our family favorites. It’s a great blend of beautiful color and delicious flavor.
I usually marinate my chicken in a bowl with 3 Tablespoons of Soy Sauce,
1 teaspoon of Garlic and 1/2 teaspoon of Ginger for this recipe. Then I start
chopping my vegetables and making the dressing. When the salad ingredients
are ready to go, I throw the marinated chicken onto the grill and because I
always prepare it scallopini-style by filleting the breasts and then pounding
them into thin, quick-cook servings, it cooks evenly in just a few minutes!
Asian Chicken Salad with Homemade Dressing
1 large carrot, peeled & thinly sliced (as pictured above)
3 cups shredded cabbage, shaved
3 cup romaine lettuce, chopped
1 small can mandarin oranges, drained & rinsed
8 ounces chicken breast, grilled & sliced
1/2 cup chow mein noodles
Dressing
1/4 cup vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
1/2-1 teaspoon granulated sugar, add gradually
Mix the salad ingredients together, add chicken and mandarin oranges. Drizzle with dressing. Top with chow mein noodles. Enjoy a bowl or two or three!
