Chipotle – Lime Chicken Skewers {Hellmann’s Recipes}}

We are quickly moving from Spring to Summer which makes me so excited because that means our schedule will be much more flexible, allowing us to entertain friends lots!  When it comes to entertaining, keeping the refrigerator stocked with certain ingredients keeps life simple.  Here are a few that I like to keep on hand.

With these ingredients on hand, I am able to entertain easily.  I’ve been enjoying the recipes found on Hellmann’s Recipes website.  I plan on making Chipolte Lime Chicken Skewers this weekend when we have friends over (I’ll definitely be using cilantro from our garden)  In the summer, we use the grill constantly so this is perfect!

Chipotle – Lime Chicken Skewers
1 cup Hellmann’s® Real Mayonaise
2 Tablespoons lime juice
2 Tablespoons chopped  fresh cilantro (optional)
2 Cloves garlic, finely chopped
1 teaspoon ground chipotle chile pepper or 1 chipolte pepper in adobo sauce, finely chopped
2 pounds boneless, skinless chicken breasts (or thighs), cut into strips

Combine all ingredients except chicken in a medium bowl; reserve 1/2 cup mayonnaise mixture.  Thread chicken on skewers*, then brush with remaining mayonnaise mixture.  Grill or broil chicken, turning once, 8 minutes or until chicken is thoroughly cooked.  Serve chicken skewers with reserved mayonnaise mixture.
