Grilled Chicken Salad with Dried Cherries {Recipe}

I’m pretty sure I could live on only salads throughout spring and summer!
Here’s the recipe to one of my favorites…
Grilled Chicken Salad with Dried Cherries
I’m a little obsessed with my meat being cooked completely even!  I like to prepare my chicken breasts, scallopini-style by filleting them and then pounding them into thin, quick-cooking servings. My favorite chicken tenderizer is {here}.  It is absolutely amazing to me that marinading my chicken for fifteen minutes in the refrigerator with 1 packet of Grill Mates Zesty Herb Marinade mixed with my chicken develops a rich flavor of an overnight marinade…and all I have to add to it is water, white vinegar and vegetable oil. I’m talking restaurant-quality flavor! {And no, I’m not affiliated}.
I set the table with a large bowl of mixed salad greens, and three ramekins filled with feta cheese, dried cherries and walnuts….and a plate of delicious grilled chicken on the side!  When we sit down together as a family, part of the fun is filling our plates with these yummy ingredients!  {The dried cherries seem to disappear real fast.}
Here’s my tasty Grilled Chicken Salad with Dried Cherries!
We drizzle this salad with our homemade Favorite Balsamic Vinaigrette {here}.

Grilled Chicken Salad with Dried Cherries
12-14 ounces, green salad
1/2 cup walnut pieces
1/2 cup dried cherries
1/2 cup feta cheese
8 ounces chicken breast, grilled & sliced

Toss the salad, walnut pieces, and dried cherries together in your salad bowl.  Garnish with feta cheese and a few strips of grilled chicken breast.  Drizzle with Balsamic Vinaigrette dressing, recipe found {here}.  Enjoy with a buttered baguette!

  3. We love to use the Grill Mates too!! And I seriously can’t remember the last time I bought salad dressing at a store. It is so much more fun (and healthy!) to make my own and I’m always looking for different variations. Thanks for the great recipes Aimee! :-)

  8. I just finished a filling dinner, but this is making me salivate! I make a salad with balasamic and feta, but I use candied pecans instead of walnuts. I’ve never put chicken or cranberries in mine. Will have to try it out!
