Recipe: Totally Scrumptious Chicken Salad

Another meal idea for those who are running from one place to the next, but want to have a prepared at home meal….even if it’s eaten on the road! I love making my recipe for ‘Totally Scrumptious Chicken Salad’ the night before and being ready for busy weekend lunches! This weekend is going to be one of those weekends for sure! My sweet Big B made All Stars in Baseball and will have several all day tournaments this summer…he almost turned it down because Baby B didn’t make the team…Baby B’s response, “I’ll just work on getting ‘rweal’ good on my swimming this summer brother and then I’ll try out next year. I want you to play and beat the other guys.” Melted my heart!
To make my chicken salad, I combine shredded chicken, diced celery, diced apples and three teaspoons of lime juice! {A while back, I asked my grocer which is the sweetest apple in the store! He pulled out his paring knife and started slicing several varieties…a little group of ladies gathered around and a taste test was performed on the spot. We all agreed…the Fuji Apple had a SUPER sweet flavor! Needless to say, Fuji Apples are my choice for my chicken salad recipe! Apples are great in Chicken Salad because they stay crisp into the next day…and the lime juice…in addition to tasting great…keep the apples from getting discolored!
I add a cup of mayonnaise {which I’ll be honest with you, I’m not a mayonnaise lover, but the
lime juice, apples and hint of salt are the only flavor that are kicking when it’s all combined!
And there it is ‘Totally Scrumptious Chicken Salad Croissant’
{named by my sweet little girl who loves it to pieces}
Chicken Salad
2 cups of shredded chicken {rotisserie, canned, or leftovers}
1 cup mayonnaise
3 teaspoons lime juice
1 apple, peeled, chopped finely
1 cup celery, chopped finely
1/4 teaspoon, coarse salt
1/4 cup sliced almonds, optional
coarse salt and pepper, to taste
Combine ingredients and allow to chill in the refrigerator covered, before serving. I like to serve my chicken salad, when it’s refrigerated overnight…allows the flavors to blend! But, there have been many a days I’ve served it just an hour later and it’s GREAT that way, too!

Chicken salad is my FAVORITE sandwich thing. I add grapes to mine. Like the idea of the lime juice, next time I will try that!

I’ve never used apples in chicken salad before. I sometimes use grapes, though. I’ll have to try this version! I think using rotisserie chicken is the key to a fantastic chicken salad. It’s so much better than any other chicken!!
