Christmas came and went way to quickly…I didn’t have a chance to make our favorite Easy Caramel Marshmallow Fudge! (The secret ingredient…International Delight Creamer!) I decided this weekend was the perfect time to make it…can’t have Chocolate Caramel Creamer in the fridge and not put it to good use! This fudge doesn’t have an ounce of coffee flavoring in it! Use whichever cream flavor you’d like…the flavoring is just a hint…the texture is PERFECT!

And because all of this goodness is meant to be shared we packaged some up and shared the love with friends. My new favorite way of packaging goodies…ramekins! They’re cheap, reusable, and super cute! Ingredients:
1/4 cup butter
2 1/2 cup granulated sugar
2/3 cup of International Delight Creamer (your favorite flavor)
12 ounce bag semi-sweet chocolate chips
7 1/2 ounce jar marshmallow fluff –yum.
1/2 teaspoon salt
1 teaspoon vanilla extract
Cover an 8 inch square dish with foil –allow the foil to hang over so you can easily lift out before cutting. Coat foil with cooking spray.
Combine butter, sugar, and International Delight Creamer in a medium sized saucepan. Cook over medium heat, stirring occasionally. Continue until mixtures reaches 248 degrees on candy thermometer.
Remove from heat –stir in chocolate chips, marshmallow fluff, salt, and vanilla. Mix well and pour into prepared 8 inch square pan. Let cool completely before cutting (overnight, if you can wait).
