I recently found my favorite cooking magazine!  I think it was written just for me — Cooking Light Super-Easy Recipe Shortcuts magazine!  It is full of ideas for cooking fast, easy, and healthy recipes.  These are meal ideas that I’m happy to serve my family and they’re happy to be served!  I want to try so many of the’s my first…a snack that was a total hit and I will definitely hold onto as an after-school-snack!  Check out this recipe, Chocolate-Granola Apple Wedges!

Do you have any picky eaters?  I have my own little list of things I don’t enjoy, so I try to be real careful to keep my sweeties from following victim to the same trap!  Mealtimes are meant to be a time of connecting with each other, but when food gripes surface, the fun ends real fast!  Here are some great ideas to help keep the focus on each other at dinnertime…anytime!

Chocolate-Granola Apple Wedges Recipe:

2 ounces semisweet chocolate, finely chopped

1/3 cup low-fat granola without raisins

1 large apple, cut into 16 wedges.

Place chocolate in a medium microwave-safe bowl.  Microwave at High 1 minute or until chocolate melts, stirring every 15 seconds.  Place granola in a shallow dish.  Dip apple wedges, skin sides up, in chocolate; allow excess chocolate to drip back into bowl.  Dredge wedges in granola.  Place wedges, chocolate sides up on a large plate.  Refrigerate 5 or so minutes, until set.  ENJOY!

    I loved this recipe, too – such a great after-school snack idea! I made it with peaches this time since we don’t have apples in season yet around here. Such a hit! I want to try it dipped in nuts, too. Beautiful photos and kiddos 🙂
