My sweeties are back in school so I’m now finding more time to work on setting up our new house! My little rancher was small, but I had created so many storage solutions. Even though this house is larger, I’m realizing that storage is going to be an issue — for now! We got a little over eager and already made a run to IKEA for shelving, but those will have to stay staring at us from boxes until we take on the paint! The colors are definitely too dreary for me!
I picked up a little something to make for lunch at home by my lonesome! Have you tried Michelina’s Lean Gourmet®!?!
I keep these in my freezer and when I feel like gourmet without the work, I pull one out and add a few extra ingredients to Make It My Own! Manicotti is my favorite…rolled pasta stuffed with a creamy blend of Romano, Parmesan, cheddar, and ricotta cheeses, and topped with a rich marinara sauce! I broil a piece of buttered french bread while the manicotti heats up for 3 minutes, 30 seconds in the microwave.
After letting it cool for a minute, I like to top it with sliced black olives and Parmesan cheese…
Even though it’s just me for lunch, I can still have a variety of tasty meals! Chicken Parmesan Bites sound so good, too — have to try them next!
