Recipe: Fabulous Griddle Toasted Bruschetta

Gardening is both relaxing and rewarding!  And I absolutely love giving my Sweet B’s the experience of caring for seeds as they become the fruits and vegetables we eat!   I thought it would be fun to share with you my Fast and Fantastic Griddle Toasted Bruschetta Recipe using tomatoes and basil from our garden.

If you chat with my sweeties for any amount of time, you’ll learn a lot about veggies!  It’s amazing what kids will pick up…little sponges!  Did you know that tomatoes are great for your heart and that they have four chambers just like we do.  While tomatoes aren’t their absolute favorite, my Bruschetta Recipe is a different story!  They’ll each eat several slices and beg for more! I totally understand, it’s my favorite summer treat, too!

Use a serrated knife to slice garden fresh tomatoes finely.  You’ll need a baguette, finely chopped tomatoes, olive oil, balsamic vinaigrette,  {homemade recipe} minced garlic, basil, and Parmesan Cheese!

Use a serrated knife to cut the baguette on the diagonal.  Brush both sides of the baguette with Olive Oil, then…Cook on griddle over medium heat until golden on both sides.

Remove from the griddle and use a fork to top with the tomatoes, be careful not to transfer too much liquid to the baguette.  Sprinkle with freshly grated Parmesan Cheese and top with a fresh basil leaf.

Griddle Toasted Bruschetta

1 Baguette

2 Garden Fresh Tomatoes

1 Teaspoon Balsamic Vinaigrette {homemade recipe}

1 Teaspoon Minced Garlic

1/4 Cup Olive Oil

Salt and Pepper to taste

Parmesan Cheese, garnish

6-8 Basil Leaves, garnish

Use a serrated knife to cut the baguette on a diagonal.  Again, use a serrated knife to chop garden fresh tomatoes finely.  Place cut tomatoes in a strainer or on a paper towel to drain juices.  Mix minced garlic and balsamic vinaigrette in a bowl, then add finely chopped tomatoes to the bowl and cover with sauce.  Put aside.  Brush both sides of each baguette slice with olive oil and a dash of salt.  Use griddle to toast both sides of baguette slices on medium heat until golden.  Remove from griddle and use a fork to top with the tomatoes, be careful to avoid sauce from transferring to the baguette.  Sprinkle with freshly grated Parmesan Cheese, a dash of salt, and top with a fresh basil leaf.  Makes 6-8 slices.  Enjoy.
